Types of Catering Services for each event

The perfect event exists, but it depends on many variables. The key to an unbeatable celebration is to plan the event well and ensure that the attendees have the best attention.

There is no one type of catering service that is better than another. Simply put, the best service is the one that adapts to the needs of each specific case.

In the Hospitality area we can find 4 different types of services for events, with different staffing needs in each case:

COCKTAIL SERVICE

Service in which guests stand during the event and waiters serve food and beverages with trays from the kitchen or strategic points of interior bars.

In this case, the waiters’ functions are simple, since the time taken to bring out each tray is determined by the rhythm of the diners’ consumption.

PLATING SERVICE

This is the most common type of service, as the guests are seated to eat. (Weddings, baptisms, birthdays, corporate events, etc…)

The waiters take the dishes already prepared with the food in the kitchen and place them on the diners’ table, on their right side, always following the proper order and protocol.

Waiters must therefore be agile with timing and knowledgeable about the rules of service. The coordination of the waiters is very important, since all tables must be served at the same time, maintaining the correct appearance and temperature for consumption and respecting the order of the dishes and drinks without losing the rhythm of the range of assigned tables.

In the case of a Restaurant service, the waiter will also take the diner’s order since he can choose from the menu, therefore, his management will also include controlling the arrival times of the food and the rhythm of the meal so that everyone at the table eats at the same time.

FRENCH STYLE SERVICE

This service is similar to the previous one, but is slower and has a higher cost since more waiters are needed and it requires highly qualified personnel.

The waiter presents the food to the diner on a platter on his left and serves himself on his plate with the cutlery (tongs, spoon and serving fork).

Therefore, the waiter must have the dexterity to hold the platter with the food, while indicating to the diners how to serve themselves.

PINKING SERVICE (English style)

This service is the least used of all since the waiters serve the food individually to each of the diners with the peculiarity that the food is not prepared by the cooks, but it is the same waiters who plate it and serve it one by one.

The food is placed in large bowls and served, usually with the help of tongs (fork and spoon).

The waiter holds the plate with the left hand and serves with the right hand and on the left side of the diner, so the waiter must be well prepared to properly execute the service at the table, serving the food and controlling the weight of the dishes.
